The article deals with the problems of ensuring the quality and safe consumption of meat and meat products produced in Russia. Reducing the import of meat and meat products to the Russian Federation sets the task for domestic producers not only to fill the deficit, but also to provide the population of the country with safe and high-quality food products. The review of scientific literature reveals the following key problems: lack of functional additives entering the Russian market from European countries; the influence of the human factor and the impunity of unscrupulous manufacturers; lack of Russian production of modern food equipment for the meat industry. In conclusion, directions are proposed related to ensuring the quality of consumed meat and meat products in the Russian Federation.
